Mark W. Allison M.B.A. (Dist), F.M.C.G.B, M.C.F.A, (CG) is Dean of Culinary Education at the College of Culinary Arts at Johnson & Wales University in Charlotte, N.C., USA. He taught at the Charleston Campus for one year before moving to Charlotte in 2005. Before becoming Dean he taught Garde Manger, Classical French and International Cuisine. Allison has been the recipient of numerous honors; most recently he won the 2009 Johnson & Wales University “Community Service Award” for his involvement with Diabetes and fund raising. 2008 (JWU) “Teacher of the Year Award” in 2006 the JWU “Outstanding Service Award”, 2003 Teacher of the Year Award at Neath Port College. He was personally honored by Prime Minister Tony Blair for his dedication to the Education and Hospitality field in Wales in 2003 at 10 Downing Street, London, England. In the same year he also won the Craft Guild of Chefs Education & Training Award which is considered nationally the ultimate achievement in culinary arts education in the United Kingdom.
Alison was born in 1964 in Newcastle Upon Tyne, the North East of England, College educated he earned City & Guilds 706/1, 706/2, and the advanced 706/3 culinary arts qualifications. In 1996 he earned a Certification in Education from the University of Wales and a Master’s degree in Business Administration with distinction from Leicester University in 1998. He has been a “Master Chef of Great Britain” since 1999 and has recently been elevated to the level of “Fellow of The Master Chefs of Great Britain”. This accolade is only bestowed to chefs who are considered to be at the top of their profession. Allison is a “Master Craftsman” of the Cookery and Food Association (Craft Guilds of Chefs) and the Hotel Catering International Management Association.
He is a frequent lecturer and judge in various international venues, he has been a guest lecturer at Colleges in France, Spain, Italy and as far a field as Alaska and Singapore. He was a Judge for the Nestle′ Toque d’Or Competition from 2003 to 2006 and has also judged the Caterer and Hotelkeeper Magazines Catey Awards which are the UK hospitality version of the Oscar awards, held each year in London, England. Alison is also a frequent writer for Caterer and Hotelkeeper, Restaurant magazine, Stockpot and Master Chef’s magazine and used to have his own recipe column in the South Wales Evening Post, he has also appeared live on TV and Radio in the UK and US. He is currently writing his own cookery book entitled “Get Smart about Diabetes” a cookery book for diabetic families.
