Good afternoon the ones I have were just picked to day and can
be kept in the fridge for up to three days . They need a good cleaning
but i can process 30 to40 pounds in an hour t an hour and a half.
I prep them by cleaning them then just cook them in buter
and deglaze them with sherry and reduce . Then add some chicken
stock cool ; and bag them and frez for later use.
