Chef Mark Hibbs of Ratcliffe on the Green will give a cooking demo using Poplar Ridge Farm produce from that week's harvest and other partner farms. Chef Mark Hibbs is well known in Charlotte for his committment to using fresh, local and organic produce. Guest Speaker Greg Pillar, Ph.D. from Queen's University Environmental Studies Department will discuss global food policies and new food policy assessments for Charlotte-Mecklenberg County. Professor Pillar and his colleague Jessica Braswell have been partnering now with Poplar Ridge Farm for three years, sharing information and organizing student visits to the farm.
